Cook time: 15 min.

Red Velvet Waffles ~ serves 6

1 1/2 cups all purpose flour

1/4 cup Cocoa

1 Tablespoon Sugar

1/2 Teaspoon Salt

2 Teaspoons Baking Powder

1 Tablespoon Red Food Coloring

1 Teaspoon Cider or White Balsamic Vinegar

1 Teaspoon Vanilla Extract

6 Tablespoons Melted Butter

1 1/2 Cups Milk

3 eggs, separated

Preheat your fancy, new waffle iron.

Sift together the dry ingredients into a large bowl. In another bowl whisk together the egg yolks, food coloring, vanilla, milk, melted Butter and vinegar. With a few brisk strokes mix the egg mixture to the dry ingredients (the mixture should have small lumps ) Beat the egg whites until stiff  and with a spatula, blend them into the batter. Cook in a waffle iron with big waffle pockets.

Cinnamon Cream Cheese Glaze:

4 ounces regular or lowfat cream cheese, room temperature

1 cup powdered sugar, sifted

1/2 teaspoon vanilla

2-4 tablespoons milk (skim or regular)

dash cinnamon

In a mixer,  blend together cream cheese, powdered sugar, vanilla, milk and dash of cinnamon.

Pour glaze into a saucepan and warm on med-low. Stir frequently.

Serve Red Velvet Waffles with warm cream cheese glaze drizzled over the top. Or use warm maple syrup if that suits your fancy better.

Optional: sprinkle with powdered sugar & toasted pecans. Voila!
